You are right that people don 't build huge walls in SW or TSW, but they do however build houses and still camp on their islands.

In SW or TSW the probability of having an ender pearl is extremely low. Also people in SW or TSW don't really have any more reasons to go to the enemy's island than Eggwars. One reason for people to bridge to other islands is to get another generator which could be a game changer for that player.

I'm sorry but no where does it say that the concept of Eggwars is "rushing". People might like to play in a camping style and yet it could be as fun as if you were rushing :P

The only problem i see with this, is that games might start with only 3-4 players in the unpopular maps.

For bows, you can actually shoot someone who is moving, if you can't predict his movements then you won't win in a 1v1 where both of you have strength. Plus you usually see the enemy coming on your island, and shoot them from far... For lava it is the same, someone with strength is very likely...

Tbh killing someone who has a strength potion isn't that hard, you just need to use your brain. You could either have a bow and shoot them, bows deal a lot of damage especially on basic, then if you aren't good with bows you could use lava and that my friend does a whole lot damage if you use it...
