You can have visitors on a co-op island but they will be able to do anything that you can do. There isn't currently a way to have people to come only to look which is probably what you are asking for.
The grinding is an important part of the game. Otherwise, some of the quest become kind of pointless.
All of these quests that people complain about are potential opportunities to get creative. Work smarter, not harder.
You should also have some mob droppers by now. I like mob droppers better because once they are built they do not require any actual work.

Additional tip - Do NOT do this quest early game. There are much better uses of your time and efforts early game. This quest eats up a large amount of time and resources for modest reward.

When I was streaming last night, I saw one island that was really well decorated. They really did a nice job with it. I also saw a new idea for a spider farm which I never would have thought of.

I totally get your point but some people start over because they feel like the "messed up" or because they want to play the entire game a second or third time.
I'm sure lots of people have considered starting their game over. Others (like me) may have already started over at least one time.
I am curious to know what thing you would most like to undo or fix from your previous attempt at this game.
Even if you plan to play solo, co-op is the way to go in my opinion. That way you always have the option of playing with others later.
SkyBlock rank cost a few bucks but it is well worth the money in my opinion for this reason.
Let me suggest that you consider building a dropper system for easy money with no work. Center this dropper on the area where you are most active. The spawners only work when you are within about 20 blocks.

There is no question about it. You will make more money by spending time on crops.
My point is the TIME.
While you are building your pumpkin patch and farming I am working toward the next island. Meanwhile, the dropper never stops creating money.
I think real money purchases are ok for this type of game as long as they don't become pay to win / succeed. I'm not in favor of any in game purchases that fast track your progress especially when they are basically required to move forward and advance in a game.
