RPG: What Version of MC should I use?

I'm playing with MCPE_1.17.2.01.

Problem:
I've noticed some lag(+5 seconds), even with ping 35.

QUESTION:
I have a backup (CLOUD) of each MC version.
Which version of MC should I use to remove this lag?

Well use Java if you have a good computer and want to use mods if not use bedrock
