I have just realised, What are emeralds for now :P?

If I am right, there is a nether star in the shop for 'Map specific items'. There you can spend your Emeralds. Like I said,if I am right. I am not quite sure. Oh and also, not every map has an Emerald generator so you won't be able to buy map specific items either.

Normally there will come an update that you can buy permanent teamupgrades. I wonder why it isn't added by the eggwars update.

He asked What you can do with emeralds and There will come an update with permanent teamupgrades. At the moment can you change your emeralds in OP stuff.

In maps like underdasea you can buy really op gear from emeralds, like potions, enchanted diamond gear, etc. But the time it takes to generate an emerald is too long in my opinion. Maybe they could decrease the time so it would be more accessible.
