Well normally people in FFA don't mind if you clean them once or twice as long as you don't go for them the entire time. But yeah that's FFA for you, have a nice time playing!

The other day while playing Java CubeCraft FFA I noticed that they got quite a few maps that aren't added to bedrock, any specific reason why?

The idea itself isn't bad by any means, but personally, I don't think it's necessary to do any changes to the current friend system.

Switched to 1.17.0 after their first attempt at removing 1.16 and didn't have any issues with it tbh, but I think that most of the people who wanted to use 1.16 just couldn't because of the bugs such as not being able to break blocks.
