Can anyone explain how a guy was able to break this egg, without actually hitting it? He didn't break all the way through. There is still a layer surrounding it (or where it was).

It could be a person hacking, but it could've been someone mining the block and right when he mined it he broke the egg but the obsidian still glitched and spawned back in..

I can't see from the picture, but sometimes people break the block directly underneath the egg and then they destroy the egg in the .01 seconds they have before it respawns. Is that what's happened here?
Probably this. It's the same technique used to climb a 2 block tower, breaking it while jumping and jump on the 2nd block in the .01 seconds.

There is a hack for this within killaura but it's for players, mobs, animals and invisible entities only, I've never heard of one made for breaking dragon eggs, most likely lag.

Can't be, this is on the map TeaParty where you can't go under the block that 'holds' the egg.
My thoughts is that it was just block-lag and the block respawned again

It's probably a glitch where someone has broken a block and it spawns back, but he had enough time to hit the egg beforehand.

There is a way to break a block behind other blocks(or at least in 1.2.5 and some other older versions i player) by attacking it exactly between the corner blocks. I haven't tested it on 1.8 yet but when I have time I'll try it.

I have tested it and proved that it is possible to do it in 1.8.https://vid.me/zo0U
https://vid.me/zo0U <-- shows me breaking tnt and a stone block at at corner
https://vid.me/l2js <-- shows me breaking more and also that I (as far as I know) do not have mods that make it more possible to hack the block away.

My thoughts exactly. It seems like a rare occurrence, so this makes sense.
I plaued 5 years minecraft, and this is a hack.
Sooo, what hack? Its a hack called Speedmine, When you break a harder block (obsidian) in speedmine, the server buggea and reappears again in block 1 or 2 seconds. But in that second where no block of obsidian, the player breaks the egg, then reappears obsidian.
Sorry for my bad english, but im spanish.
